Vietnam street food – Cooking 100 Eggs for Pizza Breakfast Meal in Vietnam

Sometimes I am tired of eating a traditional pizza in restaurants in Vietnam. Luckily, one of my Vietnamese friends showed me this unique Pizza Breakfast Meal. Looking a bit like normal pizza, the eggs pizza in Vietnam is really interesting to try. It’s thin but crispy and cheesy. I myself ate two of them in a row. Vietnamese Pizza is a rice paper with eggs and many kinds of toppings added when grilled on hot charcoal. There’s no right or wrong topping with this Vietnam street food. Some people like to add a Western spin with cheese and cut-up hot dogs. Whereas I like to keep mine very traditional with exotic Southeast Asian flavors, such as fermented shrimp paste (Mam Ruoc), dried pork, Sriracha sauce and as many eggs as possible.
FYI: Crack two quail eggs or 1 whole chicken egg directly onto the rice paper. I am hungry so I asked mines to have 100 eggs on them.
